Zucchini Canning Recipe - Faux Zucchini Pineapple
Do you have more zucchini than you know what to do with? This zucchini canning recipe is definitely one of the more interesting ones that I've made! It's a faux zucchini pineapple recipe. You start with several fresh zucchinis and end up with something that tastes just like canned pineapple.

PREP TIME: 30 M.
COOK TIME: 1 HOUR.
TOTAL TIME: 1 H & 30 M.

INGREDIENTS:
16 cups chopped or shredded zucchini, washed and peeled
46 ounces sugar free pineapple juice
3 cups sugar
1 1/2 cups lemon juice

INSTRUCTIONS:
1: Wash and peel zucchini. Shred or cut into 1/2 inch cubes.
2: Combine cut zucchini, sugar, pineapple juice, and lemon juice in a large pan or stock pot. Bring to a boil and turn heat down. Let simmer for 20 minutes.
3: Fill clean and prepared jars with hot faux zucchini pineapple. Leave a 1/2 inch headspace. Wipe jar rims, place lids on jars, and add rings. Process for 15 minutes or see above for high altitude times.
4: When the time is up, carefully set jars on a towel or other heat proof surface. Let sit for 24 hours.
