@amatorcph citrus tart is a symbol of my deep pride. Because empowering others simply tastes so much better than focusing on yourself. It’s my sixth year of my career as a leader in gastronomy. I’m deeply proud of every colleague who I hired and pushed into direction to develop as a professional and a human. And again it’s not about me. It’s about allowing to connect my intuition with a human energy willing to be hired and then just trying to understand them and give them opportunity to grow. They will grow themselves if the space is right.
I didn’t make that tart. Haven’t baked one in my life. I had an idea based on our yellow dot/circle logo that it could be ideal to create a lemon tart. A good lemon tart is delicious and easy to understand. It quickly became a citrus tart as a family of citrus has so much to offer throughout the year. @lukecyriacks took the task with professionalism, passion and joy. This is how we created the Full Moon and the Slice of Heaven. You can laugh about those names because they are jokes indeed. On the other hand they are not - the tart feels like heaven in your mouth and the whole pie looks like 🌕 When @maxlamanna (doing plant based diet) tried a piece for purely research reasons had an actual foodgasm claiming his eyes to be twitching. Ask him if you don’t believe. Or just try yourself as you can now just pop-in to us anytime between 9AM-2PM from Thursday til Monday until summer holidays start on the 8th of July.
Today on the actual Full Moon Luke was teaching @mathildesoltoft how to prep it and again I can’t feel more proud as she was the one who I hired at @atelierseptember 5 years ago when she was only 16 ready to wash any amount of dishes. Today becoming a pastry chef of @amatorcph and growing every day to become greater and greater human being. Thank you Luke & Matilde and every other soul who I had a chance to work with. There is so much I can learn from you all 🫶
